Paleo Pancake Recipe

Woop!! Pancake day is tomorrow. Do you love pancakes but hate the tired, unhealthy feeling you get afterward? Well, this recipe is absolutely for you then. This has been my go-to pancake recipe for at least a year now as its paleo (grain free), very healthy, filling and light all at the same time. Plus you can top them with whatever your heart desires.


Paleo Pancake Recipe    |    Serves 1


Ingredients:

  • One Banana
  • One Egg
  • 1/2 Cup of Oats
  • Liquid of choice, dependant on how thick you want them.

Extras

  • 1/2 Tsp Baking Powder (makes them fluffier)
  • Dash of Vanilla Extract
  • 1 Tsp Cinnamon

Blend all of the above in a blender with as much liquid as you’d like. These make small fluffy American style pancakes as opposed to large thin ones. Add coconut oil, butter or alternate oil to a pan and heat on high. Pour out individual circular blobs into the pan and cook for a minute or so on each side. Drizzle with your favorite toppings such as maple syrup, chocolate chips, goji berries, coconut, lemon or sugar. Enjoy!
